I’ve been appreciating my mom more and more as years go by. She truly is a wonderful person and I wouldn’t trade her for the world. I make sure she knows how much I love and respect her, on daily basis. And I think it’s nice treating her extra special on Mother’s Day.
Why don’t you treat mom as well? All the ideas in this post are kid and dad friendly, and therefore very easy to make. You have many choices, such as breakfast in bed, lunch on the patio, or a family dinner at home. Here are some quick and easy ideas for all three meals.

Breakfast:
Why not stick to the good old favourite of pancakes. The easiest way to make pancakes is to buy pancake mix. Some of them only ask that you add water. Make it extra special, and personalize it to mom’s taste. You can add blueberries to the batter (fresh or frozen), or applesauce and cinnamon. Serve pancakes with fresh fruit and honey. If you are feeling a little more adventurous, you can try to make your own pancakes or crepes from scratch. As a beverage, make a virgin mimosa: mix 1 part ginger ale, 1 part soda water and 2 parts orange juice.
Lunch:
Sandwiches are always tasty and easy to prepare. To add variety, buy rolls from the bin, rather than one loaf of bread. Make fancy sandwiches that you don’t usually eat. How about sliced apricots and brie on an Italian bun? Goat cheese and prosciutto on a flatbread? Sliced bocconcini and sliced tomatoes with fresh basil on a bagel? You can also add a homemade soup to this lunch meal. broccoli soup, minty pea soup with crispy pancetta, and sweet potato soup from Nutrition Check’s website are all very easy to prepare.
Dinner:
Pizza is everyone’s favourite, and you can’t go wrong with pizza on mother’s day. Make pita pizza or English muffin pizzas. This way everyone in the family can make their own creation, and mom can enjoy more than one kind. Use a pita or half of an English muffin as your “pizza dough”. Add favourite base: pizza sauce, marinara, pesto… Sprinkle with cheese. Mozzarella is a pizza favourite, but other cheese, including feta, works really well, too. Top with favourite ingredients such as chicken strips, peppers, tomatoes, mushrooms, spinach… Even fruits work, such as pineapple. Have fun with the ingredients, it is guaranteed to taste yummy! A salad such as baby spinach, walnut and tangerine goes great with pizza. Make mom a sparkling cocktail by mixing one part soda water and two parts cranberry juice.
Easy desserts that go with any meal include a fruit platter, and a yogurt parfait. You can also make desserts ahead of time, such as tasty trail mix bites, or orange tiramisu.
Don’t forget to clean up your mess in the kitchen, mom will sure appreciate it! A simple bouquet of flowers and a handmade card will add the finishing touch and complete your mother’s day surprise.
